- Well, I don't know if this is "southern style," but my dad is from the
- south and he used to cook 'em this way so here goes:
-
- Fried Green Tomatoes:
-
- Make sure tomatoes are firm and green (like Granny Smith Apples)
- Wash. Slice tomatoes into 1/4" slices
-
- You will need:
-
- 1 1/2 cups Corn Meal (more or less, depending on number of tomatoes)
- 1 1/2 Tbl. Salt
- 1 Tbl. Pepper
- Cooking Oil
- Garlic (if you like)
-
- In a bag (plastic preferably) or mixing bowl (will be more difficult),
-
- Pour cornmeal, salt, pepper (and garlic) in a plastic bag or baggy.
- Twist bag closed tightly and hold top and bottom tightly while shaking
- bag to mix spices. Take (dampened) tomato slices and put in baggy
- with cornmeal. Shake again until all slices are covered.
-
- In a skillet, preheat 1/4" deep cooking oil on medium heat. After you
- think oil is hot, place ONE slice of tomato in the pan. If it does
- not start to sizzle, it is not hot enough. Once slice sizzles,
- CAREFULLY place remaining slices in skillet. Cornmeal pops in oil, so
- be very careful. Cook for about 3-5 min. on each side or until golden
- brown.
-
- Drain browned tomatoes on paper towels. Eat 'em up, yum! :)
